It's been really long since I browsed Marina Square, so I was pleasantly surprised to see a whole new Dining Edition added to it on the second floor! It was still in construction when I last came... just shows how this place has been missed. Now Marina Square's white facade resembles Plaza Singapura's new wing. Menzo Butao sits right across Charles and Keith, and is the place to visit if you're craving for some steaming hot ramen in Marina Square.
Menzo Butao offers four soup base 汤底 options: White Tonkotsu (pork bone broth) 白, Red Miso (spicy) 赤, Black 黑, Shoyu 正油and Gyokai (seafood base) 鱼介. For each of these soup bases, they have the Tontoro Ramen, Cha Shu Ramen, Seafood Ramen, Nankotsu Ramen and Taro Ramen.
The Gyokai soup base sounded most appealing and I've never tried it, so my choice of the night was the Gyokai Ramen ($12.90++)! Eyes on the egg the moment it came, and they did it! The golden creamy yolk in-between goodness. That was the best part of the ramen. The next was the ramen itself, which was better than average. The pork slices were a little tough to bite, no melt-in-the-mouth sort of yummy yet. The soup base was savoury and had hints of seafood. However, the soup base was scalding hot when it arrived on my table, which I don't think should be the case... most ramen bowls are served at hot temperatures but definitely not threatening to burn tongues! Overall, I think Menzo Butao serves decent ramen and only on your non-picky days would you find it good.
