The rise of PUTIEN
Not just your run-of-the-mill Chinese chain restaurant, PUTIEN is a homegrown brand that began as a coffee shop in Kitchener Road in 2000. It was founded by Fong Chi Chung, who was born in Fujian, China and thereafter moved to Singapore to pursue diploma in Arts. He decided to launch Putien initially because he really missed his hometown's cuisine and decided to recreate the same tastes here in our sunny island! That was how it began, but thereafter PUTIEN's success and meteoric expansion to 24 outlets internationally is due to one reason: Fong's determination to use the best ingredients for all their dishes.

This is what we see and taste for their launch of PUTIEN Duo Tou Clams Festival! I know that many people have the feeling that clams aren't delicious or are just strange, but PUTIEN totally proves my belief that 'there are no natural ingredients that taste bad, it's a matter of freshness and skill prepared'. Get ready to change your impression of clams here with their amazing 6cm succulent meaty goodness of clams encased in golden shells air-flown freshly from Duo Tou Village. Here are the 7 clam dishes to impress you:



Steamed PUTIEN Clams with Minced Garlic
This is a perfect family-friendly starter, a classic cooking style that will cater to everyone across all ages. These clams are steamed lightly with minced garlic, spring onions and chilli. The minced garlic is especially worth mentioning - Chef explained that they had specially treated it such that it does not leave a garlicky aftertaste in your mouth, even though you do enjoy the taste with the clams. At the end of the meal, there was not a hint of garlic lingering.

Steamed PUTIEN Clam with Wine
The clams are stuffed generously in the porcelain white bowl, steamed upright with traditional Huadiao Chinese wine. Compared to the first dish, this brings out much more of the pure taste of clams - a true test that allows diners to completely enjoy its premium quality. The goodness of the clams were also steeped in the soup, making it especially sweet and delicious!

Stir-fried PUTIEN Clams with Ginger and Spring Onion
This dish is reminiscent of many other Chinese dishes, but what's different about using clams is that its freshness and its natural sweetness actually elevates the quality of the other elements as well. If you'd love to taste the succulent essence of the clams, this is another chance!

PUTIEN Clam Omelette
This dish is the most 'local' way of enjoying clams in Duo Tou Village where these clams were harvested from, done in a healthy and delicious manner with lesser salt and oil. The seafood element does reminded us of oyster omelettes. It is refreshing to enjoy omelette in this different manner, though I wasn't a big fan as I found that this discounted the wonderful taste of the clams.

Baked PUTIEN Clams served on Hotplate
I'd always list which dish is my favourite - and if I have to pick, it'll definitely be this! Other than how gorgeous it looks in the pearly white bed of sea salt, I went starry-eyed with how purely fresh and juicy the clams were in this. According to Chef, the best way to eat it is to first remove the clam from its shell - it slips off so easily - and dip it into the sea salt. The succulent salt-baked clams tantalize our taste buds so much, it almost felt like we are tasting the oceans. Absolutely delicious and such indulgence for this one.

PUTIEN Clams Soup With Toufu Meatballs
For a comforting rendition of clams, we had it in a traditionally prepared version as well, with the star ingredients boiled with an assortment of cauliflower, snow peas and toufu meatballs to highlight its natural sweetness. The toufu meatballs are made in-house. The soup is the best - remember the steamed clams steeped in a bowl of Chinese wine? This is very similar, because of the natural sweetness of the clams, the soup became very tasty as well - drink it to the very last drop!

Salted Spicy PUTIEN Clams
Crisp and lightly battered with spring onions and diced chilli, this is a dish perfect on its own or complemented with beer. I like how thin the batter is and the clams remain juicy within the fried encasing. At this point, I was truly more surprised and impressed by the number of delicious ways they incorporated the clams. In fact, each of them has its own strengths that make them so different.
